STRAWBERRY & VANILLA PORRIDGE

CREAMY VANILLA PORRIDGE, STIRRED THROUGH WITH STRAWBERRY CHIA SEED JAM. DRIZZLE WITH SWEET MAPLE SYRUP & SMOOTH CASHEW BUTTER FOR A DELICIOUS INDULGENT HEALTHY BREAKFAST

STRAWBERRY & VANILLA

PORRIDGE

SERVES: 1

INGREDIENTS:

Porridge

  • 40g of oat bran or 50g of sprouted organic oats

  • Quarter pint of almond milk or dairy free milk of choice

  • Quarter pint of filtered water

  • Half tsp cinnamon

  • One tsp vanilla extract

  • Six drops of liquid stevia - optional

  • Pinch of salt

Strawberry Chia Jam

  • One cup fresh of frozen strawberries, hulled and cut in half

  • Quarter cup of filtered water

  • Squeeze of lemon juice

  • One dessertspoon of honey

  • One tbsp chia seeds

OPTIONAL: 

  • Paleo Granola

  • One scoop vanilla protein powder

  • Sliced Banana

  • Fresh Berries

  • Bee Pollen

  • Seeds

  • Fresh berries

DIRECTIONS:

  1. Make the strawberry chia jam by adding all jam ingredients apart from the chia seeds into a small saucepan & heat over a medium high heat. Heat for about ten minutes until mixture begins to thicken as the steam escapes. Stir continuously & break down the strawberry pieces as you go.

  2. Once the mixture has a jam like consistency, thick & gloopy, stir in the chia seeds and once fully mixed, leave to cool a little. Pour what you are not using on your porridge into a sterilised jar. Once completely cooled, store the sealed jar in the refrigerator.

  3. To make the porridge, add the porridge ingredients to a small saucepan over a high heat and stir well. Continue stirring until porridge bubbles and thickens to your desired consistency.​

  4. Pour into a bowl ready to serve then spoon on your jam and other toppings if desired.

 I'll be honest with you, I thought chia jam would be time consuming & difficult to make. A bit like making normal jam, using thermometers with the chance of scalding yourself with the hot as lava liquid. But, it turns out it's not difficult at all. In fact it's really easy. I made a batch for another recipe I've developed (more on that soon) and had some left over. As I never normally have jam I thought why not treat yourself and make jam porridge? I know, I really know how to live the high life!

 

So I went all out and made this delicious creamy bowl of vanilla oats and stirred through the strawberry jam. I topped it with some Paleo granola, cashew butter and a drizzle of pure organic maple syrup. It was amazing. I know I say this every time but really it was. It wasn't breakfast either, I made this for my lunch and I absolutely loved it. I've since made this dish again and added vanilla protein powder to the mix after my morning gym session. I can highly recommend you do this too.
