SMOKEY CHIPOTLE & ZESTY LIME PRAWNS

PERFECT BALANCE OF ZESTY LIME & SPICY CHIPOTLE FLAVOURS MAKE THE HUMBLE PRAWN DRESSED & READY FOR ANYTHING

ZESTY & SPICY PRAWNS

SERVES: 2

INGREDIENTS:

  • One pack of raw jumbo prawns/shrimps approx 180g

  • One tbsp of Chipotle Paste

  • Juice of half a lime & zest for topping

  • Half tsp salt

  • Half tsp cracked black pepper

  • One head of broccoli chopped into florets

  • Coconut oil for sauté pan

 

OPTIONAL:

DIRECTIONS:

  1. Combine the Chipotle paste, salt, pepper, and lime juice in a bowl.

  2. Add the raw prawns and stir until coated. Leave to marinate whilst you move onto the next steps

  3. Fill a saucepan half full with water and bring to the boil. Using a colander, steam the broccoli for two minutes & sprinkle with a pinch of salt

  4. At the same time place a sauté pan over a medium high heat and heat a small amount of coconut oil, enough to coat the bottom of the pan. Once hot, add the prawns & sauce and cook for about three minutes until the prawns begin to turn pink but are not quite cooked

  5. Once the prawns reach this stage, place the steamed broccoli into the sauté pan along with the prawns and continue to cook. Stir so the broccoli becomes coated in the paste

  6. Continue to cook until prawns are cooked and ready to serve, approx two more minutes

  7. Serve immediately and if desired sprinkle with some lime zest or sesame seeds
