Sunshine in a bowl. This will become your new favourite, it's uplifting to have something tropical when you're in the bleak winter months.
A refresh of a tried & loved recipe of mine from a few years back. I didn't realise until today that I hadn't previously included it within my recipe pages so here it is. A delicious golden bowl of mango blended with sweet creamy cashew butter and a little vanilla. Add in the nutrient blessed maca powder and benefit from all of its antioxidants, improving energy and balancing hormones.
200g chopped & frozen mango
100g chopped & frozen banana
2 tbsp cashew butter
1 cup dairy free milk or water
2 scoops of vanilla protein powder or 2 tsp vanilla extract
Sweetener of choice to taste such as medjool dates, stevia. How much you use if any depends on how ripe your banana & mango pieces are and if you use protein powder that normally comes already sweetened.
1 tbsp maca powder
100g chopped & frozen courgette (optional but zero taste & adds extra nutrients & fibre)
Large handful of frozen spinach
Toppings such as fresh mango, hemp seeds, chia seeds, coconut flakes, granola etc
Place all ingredients apart from toppings into a high powered blender and blend until smooth. Add a little extra liquid if needed.
Pour into bowls and top with delicious toppings if desired and serve.
Alternatively add a little extra liquid and serve as a smoothie.
