Apple Pie Porridge - Three Ways

Dark cold mornings scream out for hot bowls of comfort food and what could be more comforting than that age old dessert favourite, Warm Apple Pie? I suppose Sticky Toffee Pudding but I haven't got around to that yet, maybe I'll add that to my recipe ideas list. Anyway back to the matter at hand which is this bowl of Apple Pie Porridge.  

 


Full of aromatic mixed spice, cinnamon and sweet vanilla. Made using a combination of chia seeds and oats makes this breakfast healthy, balanced and delicious. But hold up, I haven't told you the best bit yet, this recipe can be altered ever so slightly to make three different variations on a great classic. You get your warm bowl of Apple Pie Porridge for those cold winter mornings. Or how about Apple Pie Chia Pudding as a little take with you on the go snack? And finally you have Apple Pie overnight oats for those mornings when time is of the essence. Make a batch the night before and its ready to go as you're running out the door. 


Three delicious recipes for the price of one, they're free but you know what I mean! Before I start to sound like one of those infomercials on QVC, here are the recipes.

SERVES: 2

INGREDIENTS:

 

Chia Porridge

 

  • Half a cup of dairy free milk of choice

  • 2 tbsp chia seeds

  • 2 tbsp almond butter

  • 3 pitted dates

  • 1 tbsp coconut sugar

  • 1 apple - I like to use Pink Lady variety

  • 1 tsp vanilla extract

  • 1/2 tsp ground cinnamon

  • 1/2 tsp mixed spice

Porridge

  • 3/4 cup filtered water

  • 40g oats or oatbran

  • Quarter cup of dairy free milk

OPTIONAL:

Toppings

  • Fresh blackberries

  • Chopped pecans

  • Sliced apple

  • Sliced Banana

  • Cinnamon

  • Maple Syrup

  • Nut butter

  • Toasted pumpkin seeds

 

 

DIRECTIONS:

To make the Chia Pudding & Chia Pudding Porridge

  1. To make the chia pudding, place all of the chia pudding ingredients into a blender and blend for about 30 seconds until thick and smooth. Pour the mixture into two small glasses, cover and place into the refrigerator for a minimum of four hours or overnight. If you are making Chia Pudding Porridge, pour the mixture from the blender into a small saucepan and continue onto the next step.

  2. Place all of the porridge ingredients as well as the blended chia pudding mixture into a small saucepan, stir to combine and heat over a high heat.

  3. Continue stirring until porridge bubbles and thickens, around five minutes. Once the porridge has reached your desired consistency remove from the heat and pour into two bowls ready to serve.

  4. Top with the optional toppings & enjoy.

To make Chia Pudding Overnight Oats

  1. Follow the above instructions to make the chia pudding. Once blended add the porridge ingredients but reduce filtered water to half a cup and stir well, until both mixtures are fully combined. 

  2. Pour mixture into two bowls, cover and place in the refrigerator overnight.

  3. Top with your desired toppings in the morning, eat and enjoy.
