PINK PITAYA & MACA PORRIDGE

PINK PORRIDGE

I've been reading a lot of forecasts for 2018 regarding food trends. One reoccurring theme I've noticed is superfood powders such as Maca.  I've been using Maca for at least the last three years so I do feel a little smug! Well done me.

 

Anyway, I thought I would jump on this bandwagon and showcase one of my favourite looking porridge dishes packed full of these trendy little superfood powders we are no doubt going to be hearing more of. I give you my delicious and pretty as a picture Pink Porridge.

 

SERVES: 1

INGREDIENTS:

  • 50g sprouted raw, organic, rolled & naked oats 

  • One cup of dairy free milk of choice or hot filtered water or a mixture of both

  • 1 heaped tsp maca powder

  • 1 heaped tsp of pitaya powder

  • 1 tsp vanilla extract

  • Sweetener of choice to taste - I like to use natural stevia or maple syrup

  • 1 scoop of vanilla or plain protein powder - optional

TOPPINGS: Optional

  • Raw honey or maple syrup

  • Fresh berries

  • Hemp seeds

  • Granola

  • Lemon zest

  • Bee pollen

  • Fresh pitaya if you can get hold of some

  • Nut butter

  • Coconut flakes

DIRECTIONS:

  1. Place porridge oats, vanilla extract and protein powder if using into a small saucepan and pour over the liquid. Bring the porridge to boil stirring continuously. Then simmer over a medium heat, continue stirring for another five minutes until the porridge has become creamy.

  2. Remove from heat, stir through the maca and pitaya powder and sweeten to taste.

  3. Pour into a bowl and top with berries etc if using
