ORANGE & CHOC CHIP COOKIES

FRAGRANT VANILLA, RICH CACAO & ZESTY ORANGE, BAKED INTO SOFT & CHEWY GOLDEN COOKIES

SOFT CHEWY COOKIES

SERVES: 8 - 10

INGREDIENTS:

  • One jar (170g) crunchy cashew butter – I use Meridian as its purely cashew nuts with no added ingredients

  • 1/3 cup of organic runny honey

  • 1 organic egg – whisked

  • 1/3 cup 100% cacao chopped into small pieces – I use Willies Cacao 100%

  • 2 tsp organic vanilla extract

  • 1/2 tsp cinnamon

  • 1/2 tsp baking powder

  • 1/2 tsp bicarbonate soda

  • 4 medjool dates – stone removed & chopped into small pieces

  • 1/3 cup Paleo candied orange peel 

DIRECTIONS:

  1. Preheat oven to 180 degrees.

  2. Place all ingredients in a large bowl and mix well.

  3. Line a baking sheet with baking paper.

  4. Use a dessert spoon or ice cream scoop to scoop out a dollop of cookie mix and pour onto baking sheet so it forms a messy lump. Space each dollop out so cookies do not melt together when they bake.

  5. Bake for around 10-12 minutes. Edges should be golden and the middle soft. Be careful not to over bake .

  6. Transfer to a wire cooling rack.

  7. These cookies are best served warm, but also delicious the following day if kept in an airtight container.
