LEMON & VANILLA PROTEIN CHIA PUDDING

WITH SUMMER BERRIES

DELICIOUS LAYERS OF CREAMY VANILLA CHIA PUDDING, LEMON ZEST & FRESH SUMMER BERRIES. THESE ARE THE PERFECT SNACKS TO TAKE ANYWHERE

PROTEIN ZESTY PUDDINGS

I adore fresh lemon zest in smoothies, desserts and all manor of dishes. It just screams fresh, vibrant and summer vibes. These delicious chia puddings mix all the benefits of chia seeds and protein into one little grab and go breakfast or snack to enjoy any time.

SERVES: 4

INGREDIENTS:

  • Two cups of filtered water

  • One scoop (30g) Vanilla protein powder 

  • Half cup of chia seeds

  • One heaped tbsp dairy free plain or vanilla yoghurt

  • Zest of one lemon 

  • Selection of fresh berries​

 

DIRECTIONS:

 

  1. Mix water and protein powder together until smooth and then stir in chia seeds until well combined.

  2. Leave for 10mins to allow chia seeds to start to soak up the liquid and become soft. Give the mixture a good stir and then add yoghurt and lemon zest and stir through again.

  3. Place a layer of various berries of choice at the bottom of your jars/bowls and then spoon on the chia pudding mixture over the top. Add another layer of berries on top of the chia pudding, enjoy or refrigerate until you are ready to eat.
