LEMON & ALMOND CAKE BARS

LIGHT SPONGE MIXED WITH LEMON ZEST & SPICES. THE PERFECT PARTNER TO YOUR AFTERNOON CUPPA! 

LEMON & ALMOND SLICES

SERVES: 8

INGREDIENTS:

  • 4 Medium eggs

  • Grated lemon zest of two large lemons

  • 1/2 cup coconut sugar

  • 1 tsp vanilla extract

  • 1 & 1/2 cups of almond flour (ground almonds)

  • 1/2 cup tapioca flour

  • 1 tsp baking powder

  • 1/4 tsp ground nutmeg

  • 1/4 tsp cinnamon

  • 1/4 tsp powdered ginger

  • Small handful of flaked almonds to decorate

OPTIONAL

  • 1/2 cup golden raisins

DIRECTIONS:

  1. Pre-heat the oven to 170 degrees celcius (fan oven) and grease a brownie tin

  2. Whisk together the eggs, lemon zest, coconut sugar and vanilla extract in a medium sized bowl for about 30-45 seconds

  3. Next, mix together the almond flour, tapioca flour, baking powder and spices in a large bowl.

  4. Add the wet mixture to the dry mixture, whisking until well combined. If using golden raisins stir these in now.

  5. Pour the mixture into a greased brownie tin and scatter the top with the flaked almonds. 

  6. Place into the oven for 10-12 minutes or until an inserted skewer comes out clean. 

  7. Allow to cool slightly in the baking tin before slicing.

  8. Best served cold.
