CHOCOLATE & BANANA CHIA PUDDING

DESSERTS SHOULD TASTE INDULGENT, THAT'S THE WHOLE POINT! THIS DESSERT NOT ONLY TICKS ALL THE BOXES ON FLAVOUR BUT PACKS A NUTRITIONAL PUNCH TOO

CHIA PUDDING DESSERT

SERVES: 2

INGREDIENTS:

  • Four tablespoons of chia seeds

  • Half cup (125ml) dairy free milk, I prefer unsweetened almond or cashew

  • Half cup (125ml) dairy free milk or filtered water

  • One ripe banana plus extra for toppings

  • One tbsp maple syrup

  • 1/2 ripe avocadp

  • 2 tbsp raw cacao powder

 

OPTIONAL:

  • Paleo granola

  • Two tablespoons of vanilla or plain Co Yo Coconut yoghurt

  • Sliced banana

  • Desiccated or flaked coconut

  • Nut butter

DIRECTIONS:

  1. Place the chia seeds, half cup of dairy free milk or water and optional yoghurt into a bowl and stir until well mixed, then refrigerate for at least 20mins.

  2. Place everything else except any toppings you wish to use into a blender and blend until smooth. Taste and add extra sweetener if not quite sweet enough. This will depend on how ripe/sweet your banana is. 

  3. Line two jars or glasses with slices of banana then add the chia pudding mixture. Divide the chocolate mixture between both jars or glasses layering on top of the chia pudding.

  4. Add any toppings you are using, serve and enjoy.
