CARAMELISED CINNAMON PEARS & CHIA PUDDING

VANILLA & CINNAMON CARAMELISED PEARS TOP CREAMY & NUTRITIOS CHIA SEED PUDDING

CARAMELISED CINNAMON PEARS & CHIA PUDDING

SERVES: 2

INGREDIENTS:

PEARS

  • Two ripe conference pears

  • Half tsp cinnamon

  • Half tsp vanilla extract

  • Quarter cup water

  • One dessertspoon coconut oil

  • Two dessertspoon coconut sugar

 

CHIA PUDDINGS

  • Four scoops of chia seeds (approx 60g)

  • Two cups almond milk

  • One tsp vanilla extract

  • Half tsp of ground cinnamon (optional)

OPTIONAL:

  • Bee Pollon

  • Paleo Granola

  • Coconut Flakes

  • Dried Fruit

  • Nuts

  • Seeds

  • Ground flax seed or oil

  • Sliced Banana

  • Fresh Berries

  • Nut Butter

  • Dairy free yoghurt

DIRECTIONS:

  1. Distribute evenly the chia seed pudding ingredients into two bowls, stir well, cover and place into the refrigerator to set. Minimum of three hours.

  2. Take one pear and dice into small chunks, approx half a centimetre cube. Slice the other pear into thin slices

  3. Take a small pan over a medium heat and add the water. Once the water starts to steam, add the cinnamon, vanilla and diced pears. Stir so the pears are coated in the mixture.

  4. Leave to reduce for around 8-10 minutes, stirring occasionally, until all of the liquid has been absorbed. Set to one side once done.

  5. Take a medium to large frying pan, place on a medium to high heat and add the coconut oil. Once the oil has melted and the pan is hot, lay the strips of pears into the pan and sprinkle half of the coconut sugar over the pear slices.

  6. Fry the pears for around five minutes on one side, until they start to turn golden brown. Next turn the pears over and sprinkle over the remaining coconut sugar.

  7. Continue to fry for around 3mins.

  8. Once the pears have turned a golden brown colour on both sides and the sugar has caramelised, remove from heat.

  9. Remove the chia puddings from the refrigerator and top with coconut yoghurt if using.

  10. Layer half of the cinnamon pear mixture and half of the coconut pears slices on top of each chia pudding.

  11. Top with any additional toppings such as cinnamon Paleo granola, coconut flakes, bee pollen etc.
