BREAKFAST BLINI'S

WHETHER YOU MAKE MINI COCKTAIL CANAPE SIZED BLINI'S OR FULL SIZED TO TOP FOR BREAKFAST OR BRUNCH. BOTH ARE A PERFECT PALEO ALTERNATIVE

LIGHT & FLUFFY BLINI'S

SERVES: 6 LARGE OR 24 CANAPE SIZED

INGREDIENTS: BLINI'S

  • 60g ground almonds

  • 40g tapioca flour

  • 2 free range egg seperated

  • 200ml dairy free milk

  • 1 tsp baking powder

  • Chopped fresh dill - optional

INGREDIENTS: BREAKFAST BLINI'S

  • Two large blini’s as above

  • 100g smoked salmon

  • 2 free range eggs

  • 1 ripe avocado

  • Squeeze of lime

  • Fresh dill

  • Salt & pepper

  • Chilli flakes – optional

DIRECTIONS: BLINI'S

  1. Mix the ground almonds, tapioca flour & baking powder in a large bowl.

  2. Make a well in the centre and add egg yolks & whisk slowly using a fork. Stir in chopped fresh dill if using.

  3. Whisk egg whites to soft peaks and then gently fold into the batter

  4. Heat a large frying pan over a high heat with a little oil. Once hot, spoon small amounts of the batter into the frying pan to make cocktail size blini’s or pour a little extra to make the larger blinis.

  5. Once the blinis begin to bubble, flip and cook on the other side until both sides are golden.

DIRECTIONS: BREAKFAST BLINI'S

  1. Boil a saucepan of water and crack eggs into two small separate bowls and set aside. Place warm blinis onto two warmed plates, keep warm and set aside

  2. Mash up the flesh of a ripe avocado in another small bowl and season with salt & pepper, squeeze of lime & chilli flakes if using. Spread the avocado mixture across both warm blini’s.

  3. Once the saucepan of water has come to the boil, turn the heat down low and begin to make a whirlpool stirring the water with a spoon. Carefully pour the eggs into the water one at a time, leave the eggs to poach for three minutes.

  4. Whilst eggs are poaching, layer 50g of smoked salmon on top of each blini topped with avocado and sprinkle with a pinch of black pepper if desired.

  5. Once eggs have poached, remove from the water using a slotted spoon and place each egg on top of the blinis, sprinkle over the fresh dill and enjoy.
