CREAMY ADVOCADO & BASIL SPAGHETTI

AVOCADO & BASIL COURGETTI

DELICIOUS SERVED WARM OR RAW. THE PERFECT PARTNER TO CHIPOTLE & LIME PRAWNS

SERVES: 2

INGREDIENTS:

  • Two courgettes, spiralized into spaghetti

  • One ripe Haas avocado

  • Large handful or one packet of fresh basil leaves

  • Juice of half a large lemon

  • One clove of peeled garlic

  • Salt & black pepper to taste

OPTIONAL:

DIRECTIONS:

  1. Add the avocado, basil, lemon juice, garlic & pinch of salt & pepper (to begin with) to a food processor

  2. Blitz into a creamy paste, about 10 seconds

  3. Taste and add extra salt & pepper if needed & set aside. If you want to serve this dish raw, stir the sauce through the courgette spaghetti and serve. If you prefer your dish warmed through….

  4. Heat a large sauté pan over a medium heat, once hot add the courgette spaghetti and warm through for about two minutes.

  5. Add the avocado & basil paste to the spaghetti, stir so all spaghetti is covered and warm through, approx 1-2 minutes

  6. Divide between two bowls and serve.
